Young bamboo shoots are a delicacy in Japan in and in China. Late April is when the first spring shoots show. And within hours the new shoots show up in markets like the Nishiki Market in Kyoto, Japan. And in various delectable dishes.
Shoot season affects the harvesting of bamboo for production. The farmers have to be careful not to damage the young shoots. We love bamboo in all its forms.
